Paleo cooking requires you to rethink your cooking methods, overhaul your pantry, and change the way you approach food. From dairy to grains to legumes (including soy), we had to cut out many ingredients we usually rely on—things like vegetable oil, butter, flour, cornstarch, soy sauce, wine, and even potatoes (because of their high starch content). And items we often buy, like boxed broths and jarred mayonnaise, had to be made at home to avoid stabilizers, sugars, and other unwanted additives.We quickly realized that to make flavorful, foolproof paleo meals, we would need to come up with some inventive techniques and rely on some unusual ingredients, making it a perfect challenge for the test kitchen.
In this book, you’ll find everything you need for a paleo diet. Along with chapters devoted to appetizers, breakfasts, poultry, meat, seafood, and side dishes, we also included a section for “Basics,” such as mayonnaise, mustard, nut milks, and paleo-friendly wraps and sandwich rolls. We also developed a recipe for bone broth.
