Test cook Lawman Johnson adds a tablespoon of coconut oil to a food processor full of blended dry ingredients (including coconut flour) while putting together a recipe for a paleo-friendly press-in tart shell. Since traditional wheat-based flours and butter are non-starters in paleo cooking, Lawman’s looking to find just the right balance of coconut oil and coconut flour (two common substitute ingredients) in order to yield a tart shell that plays nicely with a variety of fillings without overwhelming them with an assertive coconut flavor.
