Test cook Sebastian Nava transfers a skillet of sautéed calamari and vegetables into a serving bowl as he sets up for a tasting of five different recipes for calamari salad. More often than not, the only way we see calamari in the test kitchen is fried, but Sebastian’s looking for a way to break away from batter by trying several different cooking methods, including sautéeing, poaching, and even grilling.
